With ION at Sea, Simon Rogan is taking Malta's only two-Michelin-starred dining experience beyond the restaurant walls, combining exceptional cuisine, luxury hospitality and the beauty of the Mediterranean.


ION Harbour has established itself as Malta's only two-Michelin-starred restaurant. What inspired the creation of ION at Sea, and how did the idea of bringing a Michelin-starred dining experience aboard a Riva yacht first come about?

We are always looking for ways to challenge ourselves and build on our current offering, so when Mark suggested using Iniala's yacht for our guests, we saw the potential to create something truly special. It felt like a natural extension of what we already do at ION Harbour, bringing guests closer to the landscapes that inspire our menus. ION at Sea allows guests to engage with the environment in a much more immersive way.

Translating the precision and standards of a two-Michelin-starred kitchen onto a moving vessel is no small feat. What were some of the biggest creative and operational challenges involved in making the concept a reality?

Charlie, ION at Sea's head chef, and Arsen, the restaurant manager, have been working intensively on the menu and service style, as serving on board a yacht definitely isn't straightforward. We've had to adapt the dishes to ensure they're suitable for plating and for enjoying when there's gentle motion. Space is naturally more limited than in a traditional restaurant setting, requiring a great deal of creativity and precision. So, our team has very kindly volunteered for quite a few test runs to make sure it's all perfect.

For those considering booking the experience, can you walk us through a typical journey aboard ION at Sea? What can guests expect from the moment they step on board until the final course is served?

If you opt for the Dinner Cruise, guests will be welcomed aboard the yacht at dusk and invited to settle in with a drink as the sun sets over the Grand Harbour. As the yacht cruises gently through the harbour, guests will enjoy a multi-course tasting menu accompanied by panoramic views of Valletta and the Three Cities.

For those seeking a more leisurely experience, the Ultimate Cruise includes an excursion along Malta's southern coastline, with opportunities to swim in secluded coves and discover some of the island's most beautiful and lesser-known alcoves, before dropping anchor for dinner.

Throughout both experiences, guests can choose from carefully curated wine pairings or explore a selection of exclusive vintages. The intimate setting also fosters more personal interaction with our team, enabling guests to learn about the inspiration behind each dish, the provenance of the ingredients, and the techniques used in their preparation.

The menu is rooted in the produce, landscapes and waters of the Maltese Islands. How has Malta influenced the dishes being served, and what role does local provenance play in the overall experience?

Provenance is everything. Our menus at all our restaurants around the world reflect the landscapes in which they are situated. At ION, we have been lucky to find incredible produce from a carefully selected group of artisans who care deeply about their craft. The menu is a tribute to these people and their amazing work.

At a time when luxury travellers are increasingly seeking unique and memorable experiences, what do you believe makes ION at Sea stand apart from other high-end dining and hospitality offerings around the world?

ION at Sea offers something impossible to replicate because no two experiences are ever the same. Each journey is shaped by the natural environment, changing with the tides, the colours of the sunset and the wildlife encountered along the way.

Beyond creating an extraordinary experience for guests, what does ION at Sea say about Malta's growing reputation as a destination for world-class gastronomy, luxury travel and innovation in hospitality?

Malta's hospitality is getting better and better, which shows there is an appetite not only from locals but also from an ever-growing number of international travellers.
